Chewy, Fudgy Brownies (HCLF)



Lately I've been seeing a lot of healthier brownie recipes around. Now, don't get me wrong, I'm (obviously) a big fan of healthier alternative to dessert items - but brownies are supposed to taste like brownies. They are never supposed to taste like black beans. They are never supposed to be bitter. I've tried many, many of these cult-recipes and none of them suited me. Until I saw something about using sweet potato in the batter.. the only problem was that all of the recipes were full of nuts and both me and my body have a very negative relationship with nuts. So I've been playing around with some things for a while and I've finally mastered the perfect healthy brownie. You could even eat this for breakfast if you really wanted.


What you'll need:

  • 650g sweet potato
  • 250g pitted medjool dates
  • 1/2 cup brown rice flour
  • 2 tbsp maple syrup
  • 3 tbsp cacao / cocoa powder
  • 1 tsp vanilla extract

What you'll need to do:
  1. Preheat your oven to 180 degrees Celsius. 
  2. Peel and chop your sweet potato into small pieces and boil for around ten minutes or until soft.
  3. Add pitted dates, maple syrup, cacao, vanilla and the sweet potato to a blender/food processor and blend until nicely combined. Make sure all the chunks of the dates are blended into the sweet potato.
  4. Put into a mixing bowl and combine with brown rice flour until nicely mixed.
  5. Pour onto a lined baking tray and bake for 25-30 minutes.
  6. Take out of the oven and leave to sit for around 30 minutes, and then they're all yours! Enjoy!
