Raw Choc Mint Slice

Vegan / raw / gluten free / dairy free / refined sugar free / paleo 


Raw cakes are the best. Everyone knows that. They're vegan, they're good for your body and they taste amazing. I'm obsessed with the fact that at more and more cafes they're starting to sell raw (and of course vegan!) cakes. However, I'm not at all obsessed with the fact that they're usually $250 for a bite sized piece. Well not quite. Almost though. Anyway, I've been working on making my own raw slices and cakes and here is one of my favourites so far!



Raw choc mint slice.

What you'll need:

For the base
- 1/2 cup almonds 
- 4 pitted medjool dates
- 2 tbsp melted coconut oil 
- 2 tbsp water 
- 3 tbsp raw cacao powder 

For the middle layer
- 1 cup pre soaked cashews 
- 1/4 cup shredded coconut 
- 1/3 cup maple syrup 
- 1/3 cup melted coconut oil
- 2 tbsp water 
- 1 tbsp vanilla essence 
- 4 tbsp peppermint essence 
- 2 big handfuls of spinach 

For the top
- 3 tbsp raw cacao powder
- 3 tbsp melted coconut oil
- 3 tbsp maple syrup 


What you'll need to do:

1. Blend the base ingredients together in a food processor. Spread evenly in a cake tin and place in freezer:
2. Drain soaked cashews and blend with other middle layer ingredients. Pour evenly over the base layer.
3. In a bowl, mix together the top layer ingredients. Pour evenly over the middle layer.
4. Put slice back in the freezer and freeze overnight (or for as long as possible)
5. Enjoy!

The only bad side to these bad boys is that they are SO difficult to make look pretty. If anyone has any tips, please do share. This slice keeps really well if kept in the freezer, however will melt really quickly!
