These are perfect for Christmas day as they're vegan, packed with nutrition yet still delicious - and nice light, because we all know an Australian Christmas doesn't exactly make you crave heavy, warm cakes.
What you'll need:
- 12 pitted medjool dates
- 1 cup of oats
- zest of one large orange
- zest of one lemon
- 2 tbsp of lemon juice
- 1 tbsp nutmeg
- 1 tbsp ginger
- 2 tbsp cinnamon
- 1/2 cup dried fruit of your choice (I actually left this part out as I hate dried fruit, but I believe some dried cranberries, apricots or figs would add a really nice touch to the dish.. If you're into that kind of thing)
For the Icing:
- 1/2 cup cashews, soaked overnight
- 1 tsp vanilla essence
- cranberries for decoration
What you'll need to do:
- Chop up the dates and make sure you've taken out the pips.
- Zest the lemon and the orange.
- Add all of the ingredients together into a food processor and blend.
- Pulse the ingredients until they've made a sticky dough. If you're having trouble blending, simply add a tablespoon or two of water until it blends well.
- Roll into small balls - as you would bliss balls or something similar, and then press down as seen in the picture shown.
- To make the icing, simply pulse the cashews with the vanilla essence in your food processor/blender until it's made a nice creamy constancy.
- Top your raw puddings with the cream, and decorate with cranberries to make it look super festive.
