Raw Vegan Christmas Puddings!

I'm new to the whole Christmas pudding game. I hadn't ever really had one until I was in London and tried a Christmas Pudding Nakd bar. It was delicious and also not available at home. So I've tried to recreate it in a cute little festive way. 

These are perfect for Christmas day as they're vegan, packed with nutrition yet still delicious - and nice light, because we all know an Australian Christmas doesn't exactly make you crave heavy, warm cakes.



What you'll need: 


  • 12 pitted medjool dates
  • 1 cup of oats
  • zest of one large orange
  • zest of one lemon
  • 2 tbsp of lemon juice
  • 1 tbsp nutmeg
  • 1 tbsp ginger
  • 2 tbsp cinnamon 
  • 1/2 cup dried fruit of your choice (I actually left this part out as I hate dried fruit, but I believe some dried cranberries, apricots or figs would add a really nice touch to the dish.. If you're into that kind of thing)
For the Icing:
  • 1/2 cup cashews, soaked overnight
  • 1 tsp vanilla essence 
  • cranberries for decoration 


What you'll need to do:
  1. Chop up the dates and make sure you've taken out the pips.
  2. Zest the lemon and the orange.
  3. Add all of the ingredients together into a food processor and blend.
  4. Pulse the ingredients until they've made a sticky dough. If you're having trouble blending, simply add a tablespoon or two of water until it blends well.
  5. Roll into small balls - as you would bliss balls or something similar, and then press down as seen in the picture shown.
  6. To make the icing, simply pulse the cashews with the vanilla essence in your food processor/blender until it's made a nice creamy constancy.
  7. Top your raw puddings with the cream, and decorate with cranberries to make it look super festive.
